Crème Brûlée
Made crème brûlée for the first time Saturday night using the torch and ramekins I got for Christmas. They came out great, although now that I know what goes into them, I am horrified. Half a cup of heavy cream, most of an egg yolk, and an eighth of a cup of sugar each. No wonder I felt sluggish after eating it!
I was fascinated by all the temperature changes involved in the making of crème brûlée:
UP: boil cream
DOWN: cool cream a bit so it can be mixed with egg yolks without cooking them
UP: bake so it sets
DOWN: refrigerate so it sets more
UP: torch it
I'm amused by the unappetizing English translation of this tasty dessert: burnt cream. Actually, I did burn mine. Got a little overzealous with the torch. Fire is fun.

you're not torching the ramekins, you're torching the creme brulee. mmm, creme brulee. bill and susan have those giant propane torches.
