What To Eat?

I've been having trouble finding food to eat on nights when I come home too late to cook. There's usually fruit at home, but I can't eat only fruit. I used to eat Easy Mac, but my taste buds outgrew it. I can eat cereal, but I eat that in the morning, and I've been coming home late too often to eat that much of it. I've been resorting to canned soup. I love soup, but that's going to get old soon.

What's a good, somewhat healthy small meal item I can keep at home? I want something that can keep for a while, and has a decent amount of protein. Carbs and fat are okay, but I figure if I'm still scrounging around the kitchen hungry while ignoring a freezer full of ice cream, my body's telling me it wants something else.

Feeding myself was a lot easier when I wanted ice cream for dinner all the time.

Tonight's soup: Wolfgang Puck New England Clam Chowder. Snow's Condensed kicks its butt any day.

Sounds yummy. That reminds me, I should keep bread around. My problem is I can never finish a loaf before it goes bad. They need to sell half loaves of the stuff I like!

Canned chili. Those vacuum-packed Indian thingies from TJ's. TJ's also has very good (gets up to check the shelf) Lentil Rice Biryani and those new Chinese-food shelf-stable things, like "Jasmine Rice with Green Curry and Vegetables" (I forget the other flavors).

We often have "breakfast for dinner," which means things like scrambled eggs that I rarely have time for in the morning.

I tried a sample of that shelf rice in a box. It was pretty good! One box might be a big much, but I could definitely do half a box with a couple fried eggs. Hrm...

When you make dinner freeze a portion or two for the nights when you don't have time to cook. That way you still get something you like that's healthy, and you don't have to worry as much about shelflife.

You can also buy a whole loaf and then freeze half. :-) Be sure to put it in a thick ziploc and scrunch it down to minimize the amount of air around it.

Sometimes I go to Boston Market and buy a family meal, which lasts me several days at the rate I eat. It's nice that you can get tubs of veggies also, which can go with other food groups.

I also sometimes use the backpacking meals (where you just add hot water) for days when I get home late and there's nothing otherwise available. They're surprisingly tasty.
